This is a recipe for anyone who has ever fought it out over the last crispy-edged piece from a pan of brownies.

I appreciate that this may not apply to everyone. Some people prefer the middle slice, an altogether more uniform and yielding experience, devoid of any edges, contrast and – dare I say it? – character. Of course I’m not going to judge you on your brownie preferences (ok, maybe I am), but they do say that variety is the spice of life and there’s something about the contrast of texture as crisp, chewy crust melds into smooth, fudgy middle that makes a brownie pretty much perfect in my eyes. A major occupational hazard of baking is the mess.

If you’ve ever left sticky fingerprints on a work surface, mistakenly smeared chocolate behind your ear, walked flour footprints across the kitchen or somehow managed to turn every pan and utensil you own into a pile of washing up, you’ll know what I mean.

My tiny little space for baking might be more hazardous than most. Because it’s so small, every cupboard in the kitchen is crammed to its limit, herbs and spices jostling for space with packets of pulses and only one dedicated place to keep all my baking ingredients. It’s not that I haven’t tried to encroach on other cupboards, but after storing chocolate in the same place as curry powder resulted in it taking on a strangely spicy flavour, I’ve returned to a single space to store my flour, sugar, chocolate, nuts and syrups for fear of cross contamination. We’ve just got back from two days in the beautiful county of Rutland celebrating a friend’s 30th birthday. With the recent bout of unexpected and unseasonally warm weather, he couldn’t have picked a better weekend for us to spend outside and out of London (or Leeds, where he lives), enjoying each others’ company, soaking up some sunshine and drinking in the country air.

Summer is coming to an end.

While the last few days have seen warmer temperatures and clear blue skies, there’s an autumnal note in the air. Darkness draws in earlier each evening and there’s a coldness first thing in the morning,  a reminder of frosts to come in the not too distant future. Holidays in Spain and Italy are fading to a distant memory of long, lazy days, hazy heat, bare limbs in the evening breeze.

Ever since I made this favourite little dessert on holiday in Italy, I’ve wanted to write about it on the blog. My usual recipe for chocolate mousse is simplicity itself, rich and elegant, steeped in childhood memories and consisting of just two ingredients: chocolate and eggs. It’s the ultimate store cupboard recipe (don’t tell me you’ve not got chocolate on your shelves, I don’t believe you), and involves minimum effort for maximum impact, making it an easy go-to recipe to have in your repertoire.

When I was younger, owning a drinks cabinet felt like the sort of thing I’d do when I became ‘a proper grown up’. Rather than purchases for a specific purpose, wine bought with only immediate consumption in mind or the bottle of booze that inevitably gets polished off at a house party – if only by some random stingy student that a friend of a friend invited – I loved the idea of a proper wine cellar and being able to choose from my very own wide selection of spirits.

Afternoon Tea Cupcakes {Cucumber + Champagne}

There are few things more British than a cucumber sandwich. Simple and delicate (and delicious when made properly – think paper-thin cucumber, salty butter, soft white bread), this recipe of aristocratic origin is made all the better for being absolutely unnecessary. Traditionally served at tea-time (our way of justifying the indulgence of an additional mid-afternoon meal involving a lot of cake) they have next to no nutritional value, being probably the only sandwich in the world over which I wouldn’t shed a tear to see the crusts removed. But they are a delicious nonetheless, especially when accompanied by freshly-baked scones a glass of cold champagne. Continue reading

Aga toast is probably the best toast in the world.

Other than that, and the occasional slow-cooked one-pot wonder, I’m not an enormous fan of agas. Aside from the fact that I’d boil to death were we to install one in our tiny London kitchen (that is, if it’s great weight didn’t cause it to fall through the floorboards to the foundations below), they can guzzle enormous amounts of gas and slightly scare the obsessive baker in me with their lack of precision dials and just four basic oven temperatures.

Individual Almond Treacle Tarts

For the last few days we’ve been eating our way around a small portion of the North of England. Our helping sizes, on the hand, have been rather large.

It all kicked off with a family wedding in Yorkshire on Thursday. In the unexpected (but wonderful) warm weather we feasted on three courses of stomach filling stuff – think greedy servings of soufflé, rare roast beef with Yorkshire puddings and thick lemon tart – before retiring for an afternoon of champagne and sunshine followed by an evening of even more food (in the form of dainty canapés, think crispy bacon scallops, miniature meringues and everything in between. The recipe I’m sharing today is not a chocolate mousse.

I appreciate that this may be somewhat stating the obvious, but in my mind this post was always intended to be that mousse. Sometimes things work out wonderfully in the blogging world – long, bright evenings, lots of natural light, photogenic food, other times they conspire against you – unseasonal wind and rain, grumbling tummies that devour anything you’ve made before you have a second to click a single frame.
